Baked Mochi

1 box(16oz)mochiko
1 1/2 cups sugar
1 TSP baking powder
2 cups water
1 can coconut milk
1 TSP vanilla extract
1/4 TSP coloring

With the mochiko, sugar & baking powder in a bowl, mix ingredients by
slowly adding water until blended.
Add vanilla extract & coconut milk in same manner.
Add coloring if desired.

Pour mixture in a greased(butter/marg) 9 x 13" pan.
Cover pan & seal with tin foil.

Bake at 350 degrees F. for 1 hour.

Remove foil & let cool for several hours before attempting to cut into
slices(mochi must be cool).

All edges(4 sides) should be removed due to hardness.

Cut into desired slices & roll in poteto starch.
